A very quick and simple lunch box idea for the busy human. I got the lunch box from my local Superbarn. Or you can get them at Big W. It’s the Sistema Plastics 1.1L Salad To Go container. This container is PERFECT for salad or dip snack ideas because it comes with a top tray with 2 compartments and a cute dressing container in the middle. Then you can store your main meal or salad at the bottom.
So for the top tray, one compartment, I put a mixture of nuts, banana chips, dried cranberries, sultanas, and yoghurt balls. This is my snack. The rest is for my lunch which is a Felafel and Feta Salad with Greek Dressing. I separated the felafels into the other compartment so when I’m ready to eat the salad, I heat it up in the microwave for 30sec first. Then mix it in with the salad along with the dressing which is in the dressing container.
The salad contains lettuce, black olives, feta cheese, red onions, cherry tomatoes and avocado. Now being a busy human, all this was store bought including the felafel balls and dressing (I’m brushing up on my cooking skills – stay tuned). What I do, is get a couple of containers and divide up all the ingredients between them ready for a week’s worth of lunches. It’s so easy, and so quick… and so yummy!!
